JUN VS. KOMBUCHA. WHAT’S THE DIFFERENCE?
The biggest difference between the two is that jun is fermented using honey and green tea whereas kombucha is fermented with refined sugar and (most often) black tea. Both ferment with a SCOBY (symbiotic culture of bacteria and yeast) yet their bacterial complexes differ, allowing each to brew with their respective ingredients. Jun is also considered to be more “wild” in nature, allowing for more comprehensive botanical infusions.
WHAT INGREDIENTS GO INTO EACH TONIC?
Each jun tonic contain four main components: living jun culture, pure filtered water, organic sencha green tea and local, raw honey.
ARE THERE HEALTH BENEFITS?
We’re so glad you asked! Jun is an elixir of health if we’ve ever known one. Each component of the tonic boasts major health benefits. The living jun culture contains a colony or beneficial bacteria and yeast known to enhance gut, brain and immune function. Our local, raw honey is filled with digestive-enhancing enzymes, essential minerals and anti-inflammatory properties. The organic green tea used is a powerful source of antioxidants used to prevent free-radical stress on the body. Lastly, the wild herbs and botanicals vary between each infusion but increase the unique medicinal and healing properties of each brew.
DOES JUN CONTAIN GLUTEN?
Our jun tonics are 100% gluten-free.
CAN I BREW MY OWN JUN?
Yes! You can easily grow your own SCOBY from a bottle of jun. Simply leave 10% liquid in the bottle and cover with a breathable cloth material and secure with an elastic band. Leave at room temperature for up to 3 days or until your SCOBY begins to grow. Then transfer into a jar or fermentation tank and begin the brewing process!

Each jun tonic is handcrafted in small batches using the full ingredient listed on the individual label. No processing. No denaturing. Just real, simple ingredients sourced as local as possible.
DO YOU ACTUALLY FORAGE FOR YOUR INGREDIENTS?
We do! Time in nature is integral not only our process but our lifestyle. It brings us nourishment in every sense of the word. Ingredients we’ve foraged and harvested ourselves include west coast reishi, rose petals, lavender, mint and elderflower. Though we source the majority of our ingredients from farms across BC, a handful of our ingredients are harvested by professional foragers and herbalists, with respect and intent.
WHY IS THERE LESS CARBONATION THAN KOMBUCHA?
To ensure the integrity of each brew, we don’t pasteurize or force-carbonate. This means you’re getting natural effervescence direct from the fermentation process and the full beneficial bacterial benefit.
HOW MUCH SUGAR PER BOTTLE?
There is approximately 10g of sugar, purely from honey, per 250ml jun.
All natural, easily digestible sugars.
DOES JUN CONTAIN ALCOHOL?
Our jun has an alcohol level below 0.5%. That said, because we don’t pasteurize or force-carbonate, the culture can continue to ferment at a slow rate, outside of the refrigerator.
